How to make it
- Weigh out your grind. About 60g per litre of water.
- Put it in the strainer bag, twist the top closed, and sit the bag in a large bowl with the water.
- Knead and squeeze under the water for five to ten minutes. The water goes muddy brown.
- Wring the bag out hard at the end.
- Tip out the spent root, then pour into shells and serve.
Each 250g bag makes about 4 litres, so the full pack runs to around 16.
Why a whole kilogram
Two reasons.
The first is cost. Buying four bags at once is the cheapest way to keep kava on the shelf, and a kilogram lasts long enough that you stop thinking about reordering.
The second is that kava is a social drink, and a bowl goes further than a cup. If you host, a kilogram is roughly the difference between rationing the good one and letting everyone pick.
What's not in the box
- A strainer bag. You'll definitely need one, as grind won't dissolve.
- A large bowl for mixing. Any big kitchen bowl does the job.
- Something to drink from. A coconut shell is traditional.
